There was a moment when Will Hughes realised his interest in food perhaps went further than most of his friends. While at university, he noticed a difference between what he was cooking, or trying to cook, and the type of meal everyone else was happy with. “All my mates were just making pasta pesto,” he remembers. “But I was making the stuff I wanted to make, trying to cook ramen that was just chicken stock with bits of pork belly floating in it.” Up until that point, Will’s experience in the kitchen was limited to occasionally deputising in his family kitchen and “an after school club with one of the dinner ladies” that he went to a couple of times.
